Food Theory # 2: Homemade Shawarma's a thing?

Shawarma!
Wait... What exactly is a Shawarma?
It is a Middle Eastern Cuisine consisting of Chicken cut into thin slices, stacked in a cone-like shape, and roasted on a slowly-turning vertical rotisserie or spit. It's traditionally made with lamb or mutton, however, nowadays alternatives, being Chicken, Beef, Turkey and more. Thin Slices of Chicken are shaved off as the rotisserie continues to rotate, it can be wrapped in pita bread or a wrap. Shawarma was first introduced in the 19th Century in the Ottoman Empire which is now Turkey in the form of a Doner Kebab. (The country, not the animal; p)
Hyderabad's Shawarma!
In Hyderabad, the city of the Nizams and has a rich variety of food both in the vegetarian aspect as well as the non-vegetarian aspect(Even though Non-Veg has more options), there are many Shawarma Joints from Angaara to Shah Ghouse, there are just so many options from Regular Shawarma which consists of Chicken in a wrap with Mayonnaise and some vegetables which includes lettuce, onions, and tomatoes to Special Shawarma which is a Regular Shawarma without any salad and just chicken and mayonnaise.
Apart from just these two types of shawarmas, there are many more variants of the delicious dish such as A Shawarma Bowl (Its quite self-Explanatory, instead of a wrap or a pita bread, it's in the form of a bowl.)

Shawarma at Home? Here's the Recipe:
Now coming to the part, you're reading this article for is "Whether this dude is telling the truth or not and whether Shawarma can be made at home?
Well certainly, Shawarma can be made at home with the most basic ingredients available at your disposal.
The 3 ingredients I utilized were as follows;
1)Chicken
2)Flour Based Wraps
and Finally
3) Mayonnaise
You can add any ingredient you feel like to the shawarma wrap and customize it yourself. I did marinate the chicken with the most basic spices, which is garam masala, salt, and just some red chilli for the extra kick of heat.
Now the wrap I used wasn't your normal rumali roti or khubus (a type of flatbread) but was more of a flour-based wrap, some may even go as far as calling it a tortilla wrap but that isn't entirely true.
Now, this is the way I prepared it and obviously, it can be marinated accordingly and set it aside for a few hours. The whole point of shawarma is that it is on a rotisserie and is cooked slowly and the chicken is cut into thin slices. I tried replicating as much as possible by lightly frying the chicken in a frying pan and then put the pan in the oven which was pre-heated, with low heat so that it cooks slowly and the chicken tends to be more juicer and tender. This worked to a certain extent, where the chicken did go golden brown and to a certain extent was charred but wasn't the same char as the one, you find out on the streets where they have a rotisserie.
Since I wanted to eat a Shawarma with just Mayonnaise, all I did was lightly heat the wrap and spread mayonnaise on it and cut the chicken in small pieces as much as I could. Added some more Mayonnaise into the mix and spread it evenly. Coming to the hardest part of the entire looking like a Shawarma was the part of Rolling the Wrap so that the mayonnaise and chicken are evenly distributed throughout the entire wrap!
Think I did a decent job since it was my first try at making shawarma at least the homemade version!


(Yes, I know. It isn't as big as the ones we find on the street. However, Any quantity shawarma is better than no shawarma at all) And Yes, I did mess up the wrapping part ;P
